ABC Cupcakes


Ingredients

  • 1 1/4 Cups All Purpose Flour
  • 2 Tbsp cocoa powder
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Sea Salt
  • 1/2 Cup grated steamed Beets (about 2 beets)
  • 1/2 Cup Nut Milk
  • 1 tsp Vanilla Extract
  • 1/4 Cup Coconut Oil, melted
  • 3/4 Cup Sugar
  • 1/2 cup chocolate chips
  • 4 apples
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 190C. Line a cupcake pan with cupcake liners and mist with some oil to prevent sticking. Sift together the flour, cocoa powder, baking powder, and salt. Set this aside. In a food processor, process the milk, extract and beets until thick and smooth.
  2. In a large bowl, whisk the coconut oil and sugar for about two minutes, or until incorporated and smooth, scraping down the bowl when necessary. Add all of the beet mixture and stir this in. Add in half the flour mixture and fold it in until incorporated. Add the remaining flour mixture and chocolate chips, and fold in gently until just combined. Do not overmix! Mix on medium for about 20 seconds. The batter will be thick. Spoon it out into the prepared cupcake pan, about 3 tablespoons of batter per cup. Halve the apples and remove the core. Slice in thinly into half-moons and toss the slices with lemon juice to prevent browning. Microwave this on high for 2 minutes until soft. Use these half moons to make apple roses by lining them up and rolling it into a rose shape. Place on apple rose in each cupcake, pushing it firmly down into the batter. Bake the cupcakes for 20-22 minutes, until firm-looking and a toothpick inserted down the side comes out clean.
