Almond Butter Donuts


Ingredients

  • Makes 6 large or 18-20 mini donuts
  • 1/4 cup vegan milk of choice
  • 2 tbsp water or additional milk
  • 1 1/2 tsp white or apple cider vinegar
  • 3 1/2 tbsp almond butter or allergy-friendly sub
  • 1/3 cup pure maple syrup or agave
  • 1/4 tsp pure vanilla extract
  • 1 cup spelt, white, or gf flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup mini vegan chocolate chips, optional .
  • .
  • Almond Butter Glaze:
  • 1 tbsp almond butter
  • 2 tbsp vegan milk of choice
  • 1/8 tsp pure vanilla extract
  • 1/2 cup unrefined powdered sugar (or make a glaze by mixing almond butter with a little stevia or pure maple syrup)
  • tiny pinch salt

Instructions

  1. Preheat oven to 350 F.
  2. Grease donut pan (or mini muffin pan) very well.
  3. Combine all wet ingredients, stir in dry to form a batter, spread into pan, bake 8 min.
  4. Let sit a few min before going around the sides with a knife and popping out.
  5. Glaze, fridge, then drizzle melted chocolate on top if desired.
