Almond & Caramel Magnum Style Vegan Ice Cream


Ingredients

  • For the ice cream –
  • 2 tins coconut milk (use only the solid part)
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1 tsp almond extract
  • 1/2 cup soya milk or any nut milk
  • Blend all ingredients and leave to set in ice cream trays.
  • For the caramel –
  • 6 pitted dates
  • 3 tbsp cashew butter
  • 1 tbsp agave syrup
  • Spread the caramel over the set ice cream and pop back in the freezer.
  • For the chocolate –
  • 1/2 cup melted coconut oil
  • 1/2 cup carob powder
  • 1/2 cup cacao powder
  • 1/2 cup chopped almonds.

Instructions

  1. Combine all ingredients.
  2. For less hassle just melt down a vegan chocolate and chuck in some chopped nuts.
  3. Gently coat your ice creams in chocolate and enjoy once set!
