Avocado Pesto Flat Bread

Ingredients

  • Flat bread
  • 1 1/4 cup water
  • 2 tbsp vegan butter
  • 2 tbsp cane sugar
  • 2 tbsp almond milk
  • 1 tsp salt
  • 3 1/3 cup bread flour
  • 1 1/2 tbsp active dry yeast
  • Pesto
  • 1 Cup Fresh Basil
  • 1/2 Avocado
  • 1/2 Cup Water
  • 1/4 Cup Nutritional Yeast
  • 1/4 Cup Pine Nuts
  • 3 Cloves Garlic
  • Juice of 1 lime or lemon
  • Salt
  • pepper to taste
  • Toppings
  • Heirloom tomatoes
  • arugula
  • pine nuts

Instructions

  1. For the flat bread:
  2. Place the ingredients into a bowl and mix dough with hands. kneed the dough for 10 minutes until dough is formed and soft.
  3. Place the dough out onto a lightly floured surface, and divide into 2 halves. Roll each half out into a circle that is about 9 or 10 inches across.
  4. Place the bread onto a grill or pan. When the bottom side is browned, turn over the bread, and grill the other side until golden.
  5. For the pesto:
  6. To a food processor, add basil, avocado, water, nutritional yeast, pine nuts, garlic, lime juice and salt and pepper to taste. Mix to combine.
  7. Continue blending, scraping down sides as needed, until creamy and fully combined. If it has trouble blending add a bit more water.
  8. Pour into a bowl and set in the fridge until ready to use.
  9. The toppings
  10. Slice your tomatoes into 1/2 slices.
  11. To assemble:
  12. Spread a generous layer of pesto on the flat bread. Top it off with the heirloom tomatoes, a sprinkle of arugula and pine nuts and enjoy!
