Banana Bread Vegan Donuts


Ingredients

  • 1/4 cup raw cane sugar
  • 1 flax egg (1 tbsp flax meal + 3 tbsp lukewarm water)
  • 3 tbsp coconut/canola oil
  • 1 ripe medium banana, mashed
  • 3/4 cup + 1 tbsp all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • MATCHA ICING:
  • 1/2-3/4 cup powdered sugar
  • 1 tbsp vegan butter
  • 1 tbsp any plant milk
  • 1 tsp matcha powder
  • 1 drop of vegan food coloring (optional, to enhance the color)

Instructions

  1. Preheat oven 350°F and brush/spray donut pans with oil/cooking spray.
  2. Beat flax egg and sugar.
  3. Add mashed banana and oil, then combine.
  4. Fold in the dry ingredients.
  5. Put the batter in a large ziplock and cut one of the ends.
  6. Fill it into the pan 2/3 full.
  7. Bake for 10-13 mins until they turn out golden brown
  8. MATCHA ICING:
  9. In a bowl, combine all ingredients with a whisk.
