Berry Pancakes


Ingredients

  • 150 g all purpose flour
  • 1 tbsp vanilla sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 tbsp blackberry powder
  • 2 tbsp blueberry powder
  • 150 ml almond milk
  • 1 tbsp plant based syrup
  • 1 ripe banana, mashed
  • 1/2 tsp vanilla extract
  • Toppings:
  • hot blueberries
  • fresh blueberries and blackberries
  • almond yoghurt

Instructions

  1. Mix all dry ingredients, except fruit powders until well combined.
  2. Then add blackberry and blueberry powders, stir it well.
  3. Mix all liquid ingredients with the mashed banana, combine it with the dry ingredients and stir it until the batter gets homogenous.
  4. Heat up a pan over medium heat, add some coconut oil and put 1 tspb batter per pancake into the pan.
  5. Flip it when bubbles appear.
  6. Top it with plant based yoghurt, and fresh berries. Enjoy!
