Black Bean Veggie Burger Summer Grill Plate

Ingredients

For the Black Bean Burgers:

  • 1 (14-15oz) can of black beans, rinsed and drained
  • 1/2 bell pepper, any color, chopped
  • 1/2 onion, any color, chopped 
  • 2 garlic cloves, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/3 cup bread crumbs
  • 1 Flax egg (1 tbsp ground flax seed mixed with 3 tbsp water and set aside for a few minutes)
  • 2 tbsp chickpea flour
  • 1.5 oz vegan cheese (grated, optional)
  • 1 tbsp vegan bbq sauce (or 2 tsp liquid smoke, optional)
  • 1/2 tsp salt
  • 1 pinch of pepper
  • 56 vegan buns (brioche, whole wheat or gluten-free)
  • olive oil for cooking
  • 1 container of Good Foods Chunky Guacamole
  • Mixed greens
  • Ruby kraut (optional)

For the baked potatoes:

  • 56 medium-sized potatoes
  • olive oil
  • sea salt
  • 1 container Good Foods plant-based tzatziki dip
  • Paprika (to top, optional)
  • Fresh or dried chives (to top, optional)

For the Corn:

  • 56 ears of organic corn
  • 1 tbsp olive oil or vegan butter
  • 1 pinch of sea salt or garlic salt
  • 1 pinch smoked paprika
  • 1 pinch of pepper

Other ingredients:

  • Mixed greens
  • fresh tomatoes and/or bell peppers
  • your favorite salad dressing

Instructions

For the Black Bean Burgers:

  1. Start by prepping the flax “egg” and setting it aside.
  2. In a pan, sauté the onion and bell pepper in a little olive oil over medium heat for about 7 minutes.
  3. Add the sautéed veggies to a food processor with the other burger patty ingredients and process using the pulse function (so that everything is well combined but still somewhat chunky).
  4. Heat olive oil in a large pan (unless you’re using a grill) and form patties (1/3 cup each) with your hands. Note: you can add a little chickpea flour to your hands so it’s a little less sticky.
  5. Cook the patties over medium heat for about 3-4 minutes per side.
  6. Build your burgers: buns, greens, ruby kraut, black bean patty and chunky guacamole.

For the Baked Potatoes and corn (unless you’re grilling the corn on a grill):

  1. Preheat the oven to 425F.
  2. Poke wholes in your potatoes using a fork and add the olive oil (option to bake them in aluminum foil) and seasoning.
  3. Place the potatoes in a baking tray in the oven and set a timer for 45 minutes (if the potatoes are very large, it might take 50-60 minutes).
  4. Prep the corn with the oil/butter and seasoning and add them to the oven (on parchment paper, either added to the same baking tray or a separate one) for 25 minutes.
  5. Once the potatoes are done, let them cool for a few minutes, then open them using a fork or a knife and top them with the plant-based tzatziki. Serve everything with a side salad and enjoy!
