Blueberry Pancakes


Ingredients

  • 1 cup oats
  • 1 tbsp corn starch
  • 1 tbsp coconut sugar
  • 1 tbsp baking powder
  • 1/2 tsp ground vanilla
  • 1,5 cups plant based milk
  • 1 handful of blueberries

Instructions

  1. Blend all ingredients except the blueberries until smooth.
  2. Let sit on the counter to thicken. Use 1/4 cup of batter at a time and add a couple of blueberries.
  3. Fry (use some coconut oil if needed) on medium heat until bubbles pop up.
  4. Flip and cook on the other side until slightly brown.
  5. Serve with your favorite toppings!
