- 1 cup oats
- 1 tbsp corn starch
- 1 tbsp coconut sugar
- 1 tbsp baking powder
- 1/2 tsp ground vanilla
- 1,5 cups plant based milk
- 1 handful of blueberries
- Blend all ingredients except the blueberries until smooth.
- Let sit on the counter to thicken. Use 1/4 cup of batter at a time and add a couple of blueberries.
- Fry (use some coconut oil if needed) on medium heat until bubbles pop up.
- Flip and cook on the other side until slightly brown.
- Serve with your favorite toppings!
