Cali Style Black Bean Burgers with Pineapple Guacamole and Oven Fries


Ingredients

For the burger patties:

  • 1 can black beans drained
  • 1 red onion roughly diced
  • 2-3 garlic cloves diced
  • 1|2 c fine oats
  • 1|4 c flax meal, preferably from freshly ground flax seeds
  • 1|4 c water
  • 1 small chili pepper diced – seeded if too hot
  • Juice + zest of 1 lime
  • 2 tsp cumin powder
  • 1 tsp chipotle powder
  • Salt and pepper to taste

For the guacamole:

  • 1 large avo
  • 2 green onion stalks
  • 1 garlic clove finely diced
  • 1|4 of a pineapple peeled, cored, finely diced
  • 1-2 tsp cumin powder
  • Juice of 1 lime
  • 1|2 c cilantro chopped
  • 1 small chili finely diced – seeded if too hot

For the potatoes:

  • 8-10 potatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Toppings like chopped cilantro, sliced chili peppers and green onions
  • Also: 4 Vegan Burger buns (I used gf)
  • 2 handfuls of organic rocket or other greens/ lettuce
  • 1 red onion thinly sliced

Instructions

  1. Start with the flax egg by mixing the flax meal and the water. Set aside for later. Slice the potatoes in half lengthwise, then slice each half into 4 pieces.
  2. Toss with the olive oil and lay on a lined baking sheet. Bake in a preheated oven at 200°/400F for about 30 min or until golden and crispy. Flip them a couple times so all sides get crispy.
  3. While that happens, add the onions, garlic and chili to a food processor and pulse until fairly fine. Then add the beans and the rest of the ingredients and pulse until a mass forms. Add more oats if too sticky. It will still be a bit sticky, so you will need your hands to be wet to form the burgers.
  4. Form 4 equal size burger patties and put them on a lined oven tray. Bake at 180-200°C/360-400F for about 20 min, flipping them after 10 min (or once golden brown). You can also put them on the same tray as the potatoes if desired.
  5. In the meantime add the avocado flesh to a bowl and smash with a fork. Add the pineapple, lime juice, spices, salt and pepper, cilantro and green onions and mix well. Set aside.
  6. Toast your burger buns, layer with rocket, burger patties, pineapple guacamole and sliced onions. Serve with the fries which are topped with green onions, chilis and cilantro.
  7. Enjoy!
