Carrot Cake with Vanilla Glaze



Carrot cake:

  • 2 cups of flour
  • 1/2 cup of spelt flour
  • 2 cups coconut sugar
  • 1/4 cup of almond flour
  • 1 tsp ground cinnamon
  • 2 tsp baking soda
  • 2/3 cup olive oil
  • 2 cups of cold water
  • 2 Tbsp apple cider vinegar
  • 2 cups of shredded carrots

Vegan vanilla glaze:

  • 3 cups of icing sugar
  • A pinch of salt
  • 2 tsp of orange juice squeezed from an orange
  • 1/2 tsp of vanilla
  • 3 Tbsp of vegan butter


Carrot Cake:

1. Preheat oven to 350F and grease and prep a loaf pan.
2. Combine all dry ingredients in one large bowl. I sifted them.
3. Combine when ingredients and add shredded carrots (about 5 medium carrots). 4. Fold wet into dry ingredients. Stir well but so much. Small bits of flour is okay.
5. Fold into a loaf pan and bake for 55 mins.

Vegan glaze:
1. Mix on medium for a few minutes.
