Carrot Ginger Orange Soup with Spelt Sticks

Who doesn’t love a great combination of flavor and texture? This vegan carrot ginger orange soup goes really well with spelt bread sticks! Added bonus: both recipes are easy to make from affordable ingredients.

Carrot Ginger Orange Soup with Spelt Sticks


Ingredients

Ingredients for the soup:

  • 700g carrots
  • 5 g ginger
  • 1 orange
  • 1 potato
  • 1000g water
  • Vegetable stock
  • 1 onion
  • 1 garlic clove
  • Olive oil
  • Salt
  • Pepper

Ingredients for the sticks:

  • 125g Spelt-flour
  • 125g flour (your favorite)
  • ½ yeast
  • Salt
  • 125g Water
  • 2 tablespoons Olive Oil
  • Tomato mark
  • Italian herbs (Oregano)

Instructions

Sticks:

  1. First mix water, yeast and salt
  2. Add the flour and knead all together into a dough
  3. Roll out thin sticks and treat it with tomato mark and pizza spices. Screw them in.
  4. Put the screwed sticks into the oven for 20 minutes, 175 degrees Celsius.

Soup:

  1. Peel and slice the garlic, the onion and the ginger and brown it into a pot with some olive oil. Meanwhile cut the carrots, the potato and the orange into small pieces. Add the other ingredients and cook the soup for 20 minutes.
  2. Taste it with some salt and pepper and mash it with a mixer.
  3. I decorated the soup with fresh cress, herbs, seeds or pumpkin seed oil.
