CHIA CHOCOLATE ZUCCHINI BROWNIES

  • •450 grams zucchini, grated
  • •130 grams coconut oil
  • •100 grams almond milk
  • •30 grams chia seeds
  • •150 grams coconut sugar
  • •5-8 vanilla stevia drops
  • •70 grams cacao powder
  • •320 grams all-purpose flour
  • •150 grams dark chocolate
  • •For the topping:
  • •100 grams dark chocolate
  • •50 grams coconut cream

Instructions

  1. Preheat oven to 180ºC (375F)
  2. Grate or shred the zucchini.
  3. In a big bowl, mix zucchini, chia seeds, melted coconut oil, milk, stevia and sugar.
  4. Add in cacao and flour and stir to combine.
  5. Add chocolate chunks and stir to divide evenly among the batter.
  6. Line a brownie baking pan with parchment paper and pour the batter on top.
  7. Bake at 180ºC (375F) for 40-45 minutes.
  8. To make the topping, melt together on a saucepan chocolate and cream and whisk until smooth and glossy.
