Chocolate Cake Layered w/ Chocolate Fudge


  • Chocolate Cake (makes 3 x 6″ layers)
  • 3 cups all-purpose flour
  • 2 3/4 cup vegan white sugar
  • 1 1/4 unsweetened cocoa powder
  • 3/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 1 1/2 cup non-dairy milk
  • 1 cup neutral oil
  • 1/4 cup white vinegar
  • 1 tbsp vanilla extract
  • 1 1/2 cups fresh hot coffee or hot water


  1. Preheat oven to 350 degrees F.
  2. Line the bottoms of the pans with parchment cut to size and grease the sides.
  3. In a large bowl, sift the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. In a medium bowl, whisk the non-dairy milk, oil, vinegar and vanilla extract.
  5. Add the liquid ingredients to the dry ingredients and pour in the hot coffee or water.
  6. Whisk together just until combined.
  7. Add the batter to the baking pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Let the cakes cool completely.
  9. Frost as desired or serve with with vegan whip or ice cream!
