Chocolate Donuts w/ Pink Frosting


Ingredients

  • Makes: approx 10 donuts | Prep Time: 20-30 mins| Cook Time: 10 mins Ingredients
  • 1 chia egg
  • 1 tbsp ground chia seeds
  • 3 tbsp filtered water
  • 1/2 cup Vanilla Plant Protein
  • 1/2 cup almond meal
  • leftover from making homemade almond milk, or store bought
  • 1⁄4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1⁄4 cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1⁄4 cup unsweetened almond milk, or other mylk of choice
  • 1⁄4 cup soy yogurt, or other plant-based yogurt
  • pinch salt
  • For the icing:
  • 1/2 heaping cup cashews, soaked overnight
  • 1/4 cup maple syrup
  • 40 ml (2 tbsp + 2 tsp) almond milk
  • 4 tbsp coconut oil, melted
  • 1/4 cup thawed raspberries, plus more if desired for brighter colour

Instructions

  1. Preheat oven to 350F (175C).
  2. Begin by making your chia egg: add 1 tbsp ground chia seeds to 3 tbsp filtered water.
  3. Let thicken for at least 5 minutes.
  4. In a large bowl, combine plant protein powder, almond meal, maca powder, baking soda, baking powder, maple syrup, melted coconut oil, almond milk, almond yogurt, chia egg, and a pinch of salt.
  5. Stir or use a hand mixer to combine until smooth.
  6. Lightly spray donut baking pan with oil and scoop batter into each one.
  7. Bake for 15 minutes or until a toothpick comes out clean.
  8. Let cool slightly before popping them out of the tin, (otherwise they may break).
  9. In a blender add everything except the thawed raspberries (i.e. soaked cashews, maple syrup, almond milk and coconut oil).
  10. Blend until smooth.
  11. Pour out half the icing into a wide bowl and place to the side.
  12. Then add raspberries to the blender and blend again until smooth.
  13. Optional to add more raspberries as needed for desired pink colour.
  14. To ice mix white icing and pink icing to create a swirly look (be careful not to overmix to combine colours entirely).
  15. Dip donuts into icing to coat.
  16. Place on baking sheet and continue until all donuts are covered.
  17. Optional to add sprinkles, crushed pine nuts and other garnish.
  18. Place in fridge to chill for 10-15 minutes, or until icing has set.
