Citrus Black Beans & Sweet Potato Bowl



  • 2 tbsp avocado oil, divided
  • 2 large leeks, halved and thinly sliced
  • 3 garlic cloves, minced
  • 1 large sweet potato, peeled diced and steamed
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 1 can black beans
  • ½ c. veg stock
  • 1/2 cup orange juice
  • 1 tsp sea salt
  • cilantro, chopped, for serving
  • 2 cups quinoa, cooked, to serve


  1. In a large pot, stir fry the leek and garlic until leeks are soft and garlic is fragrant. Add in the sweet potato and spices and stir to coat. Let this heat through another 1-2 minutes then pour in the drained black beans, orange juice and veg stock. Bring that up to a boil and let simmer for about 5 minutes. Add in the sea salt and serve on fluffy quinoa with cilantro for garnish!
