Ingredients
- 250 g of your fave pasta - cooked according to package instructions
- 2 tbsp vegan butter
- 1 red onion - finely chopped
- 2 cloves garlic - minced
- 2-3 cups button mushrooms - sliced
- 1 can lentils - drained
- 1/2 cup hemp seeds
- 1/2 cup veggie stock
- 1/2 cup tahini
- 1/2 cup coconut milk
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tbsp onion powder
- 1 tbsp maple syrup or coconut nectar
- 1/2 lemon - the juice
- Parsley to garnish
- 1 tsp hemp oil to garnish
Instructions
- Sauté the onion in vegan butter until translucent.
- Add the garlic and onion to the pan and sauté until mushrooms are golden brown.
- Add the lentils, hemp seed, veggie stock, coconut cream, tahini, salt, onion powder, pepper, maple & lemon. Stir until well combined.
- Add the cooked pasta to the pan and stir until well combined. Add a splash more liquid if you’d like the sauce thinner (will depend how thin or thick your tahini is).
- Season to taste and serve with fresh parsley and hemp oil.

Made this tonight and followed recipe fairly closely, but added more mushrooms. The one ingredient I’ll leave out when I make it the next time is the maple syrup. It adds a sweetness that, in my opinion, doesn’t complement the other flavors. Other than that, it is a marvelous recipe that I’ll definitely make again.

Cooking is an adventure and one should always be open to adjusting and experimenting on their own as you are! Love it!
My son hates textured sauces is there anyway I can blend the sauce out and it still works out ? I’m trying it now it smells amazing ❤️
Hi Jennifer! Taste wise, blending it should definitely work. That said, the lentils might make it a bit thick and more soup-like, so you might need to experiment with blending it either with or without the lentils and/or adding a little extra liquid like vegetable broth.
