Creamy Mac No Cheese, Mushroom ‘Bacon’ and Broccoli

Ingredients

Mac No Cheese:

  • ½  butternut squash, roasted⁣⁣⁣
  • ½  head of cauliflower, roasted⁣
  • 2 garlic cloves⁣⁣⁣
  • 1 tsp vegan “chicken”-style stock/vegetable stock⁣⁣⁣
  • 1 tsp onion powder⁣⁣⁣
  • 1 tsp garlic salt⁣⁣⁣
  • 1 cup cashews, soaked ⁣⁣⁣
  • 2 tbsp nutritional yeast⁣⁣⁣
  • 1 cup unsweetened oat milk

⁣⁣⁣Mushroom “bacon”:

  • 2 large king oyster mushrooms
  • 2 tbs soy sauce
  • 1 tbs olive oil
  • 1 tbs nutritional yeast
  • 1 tbs maple syrup
  • ½  tsp liquid smoke
  • Pepper

Instructions

Mac No Cheese:

  1. Blend everything in a blender and add salt and pepper to taste! Add more nutritional yeast for a cheesier taste. ⁣Mix sauce in with your favourite pasta.⁣

⁣Mushroom bacon:

  1. Marinate 2 large king oyster mushrooms in 2 tbs soy sauce, 1 tbs olive oil, 1 tbs nutritional yeast, 1 tbs maple syrup, ½  tsp liquid smoke and pepper. 
  2. Pan fry until browned. Serve with steamed or pan-fried broccoli and enjoy!
