Creamy No Fat Tomato Pasta Sauce


  • (Serves 2)
  • 1 x 400g tin diced tomatoes
  • 200g steamed chopped cauliflower
  • 2 cloves garlic minced
  • 1 tsp granulated stevia
  • 1 onion diced finely
  • 1 tsp dried mixed herbs
  • 1 bay leaf
  • 1 Tbsp nutritional yeast
  • 2 cups vegetable stock
  • 1/2 tsp salt (to taste)
  • 1/2 tsp black pepper (to taste)


  1. Sauté the onion in a splash of the stock for 5 mins
  2. Add garlic and cauliflower and cook for another 2 minutes adding liquid as required to avoid sticking
  3. Add tomatoes, herbs, sweetener, S&P and 1 cup of stock and cook for 10 minutes
  4. Remove from heat, add nutritional yeast and blend until smooth, adding remaining stock as required to your desired consistency.
  5. Stir through a handful of chopped fresh basil
  6. Serve over your favourite pasta.
