Creamy vegan mushroom pasta


Ingredients

Scale
  • 1 cup raw cashews (no need to soak)
  • just over 1/2 cup boiled water
  • 1 container of sautéed cremini mushrooms (save some for toppings)
  • 1/3 cup nutritional yeast
  • 1 tbsp olive oil
  • a handful of parsley
  • thyme
  • garlic powder
  • salt + pepper to desired taste!
  • whole wheat penne

Instructions

  1. In a high speed blender, mix all sauce ingredients and serve with cooked whole wheat penne.
