Curly Sweet Potato Fry Nachos


  • Fries:
  • •Two spiralized sweet potatoes
  • •One tsp. of chili powder
  • •One tsp. of cumin
  • •One tsp. of garlic powder
  • •1/8 of a tsp. of onion powder
  • •Salt and pepper to taste
  • •1/2 of a tsp. of water
  • Toppings:
  • •Guacamole (mix one mashed avocado, one garlic clove, the juice from half of a lime, salt and pepper to taste)
  • •Salsa
  • •Cashew sour cream (in a high-speed blender, blend one cup of cashews soaked over night, the juice from one lemon, and two tbsp. of apple cider vinegar)
  • •Black beans
  • •Cherry tomatoes
  • •Cilantro


  1. ) Preheat your oven to 400 degrees Fahrenheit
  2. ) Line a baking sheet with parchment paper.
  3. ) Spiralize the sweet potatoes.
  4. ) In a large bag, add the spiralized sweet potatoes, spices, salt, pepper, and water.
  5. ) Shake all of the ingredients in the bag until the spices are evenly spread on the sweet potatoes.
  6. ) Place the sweet potato fries onto the baking sheet and bake in the oven for about 25 minutes.
  7. ) While the fries cook, make the guacamole and cashew sour cream.
  8. ) When the fries are done cooking add the topping to the fries.
  9. ) Enjoy!
