Easy Peasy Smokey Chickpeas

Easy Peasy Smokey Chickpeas


Ingredients

Scale
  • 1 red onion chopped
  • 3 cloves garlic sliced
  • Handful Mushrooms chopped
  • 1 tsp Smoked paprika
  • 10 cherry tomatoes sliced
  • Handful Spinach
  • 1 can organic Chickpeas drained
  • 1 tbsp tamari
  • 3 tbsp Nutritional yeast
  • Squeeze Lemon juice
  • ½  tsp sea Salt
  • Black pepper
  • ½  tsp maple syrup –optional

Instructions

  1. Add the oil and onion to a pan and fry gently on a low heat for around 10 minutes until soft and browning. Add the garlic and paprika and fry for 30 seconds more.
  2. Add the tomatoes and mushrooms to the pan and cook for 5 minutes until the tomatoes have softened.
  3. Now add the spinach, chickpeas, tamari and allow the spinach to wilt.
  4. Add the nutritional yeast, salt, black pepper, lemon juice and optional maple syrup to the pan and simmer for a further 5 minutes. Serve with bread or spinach flatbreads and enjoy!
