Edamame Spaghetti with Pea & Avocado Hummus

Edamame Spaghetti w/ Pea & Avocado Hummus


Ingredients

Scale
  • 100g edamame spaghetti

Avocado and Pea Hummus:

  • 1/2 avocado
  • 1 cup peas defrosted by running them under a hot tap.
  • handful of mint
  • 1 Tbsp tahini
  • juice of 1/2 lemon
  • 1 clove garlic
  • 1/2 tsp sea salt
  • twist of black pepper
  • toasted pine nuts
  • handful of peas
  • 1/2 avocado

Instructions

To make the avocado and pea hummus:

  1. Add all the ingredients to your food processor.
  2. Blitz until smooth and creamy. Set aside

Spaghetti & Assembly:

  1. Add the edamame spaghetti to a saucepan of boiling water and then simmer for 4-5 minutes until tender.
  2. Pour out the water then transfer the spaghetti to a large bowl.
  3. Dollop in some hummus and toss to combine.
  4. Divide onto two plates and then top with pine nuts, a sprinkle of peas and slices of avocado.
