Gluten-Free Blueberry Oat Bars

Ingredients

  • Makes 8 bars
  • For base
  • 1 ½ GF oats
  • 1 cup GF oat flour (whole GF oats processed to a fine powder)
  • 2 tbsp. brown rice syrup
  • 2 tbsp. maple syrup
  • ½ cup extra virgin olive oil or coconut oil
  • ¼ tsp. salt
  • ½ tsp. pure vanilla extract
  • Blueberry topping
  • 2 cups wild blueberries, frozen and slightly thawed
  • 2 tbsp. maple syrup
  • 2 tbsp. arrowroot powder

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Coat a baking pan with non-stick spray. I use a 6×10 small baking sheet for this batch.
  3. In a mixing bowl combine the oat flour, brown rice syrup, maple syrup, oil, salt and vanilla.
  4. Mix until combined.
  5. Take two-thirds of the mix and press it into the prepared baking sheet and bake for 15 minutes.
  6. In a separate bowl combine the blueberry topping ingredients and distribute onto the crust.
  7. Top the blueberry mix with the remaining oat crumble and bake for another 40 minutes.
