How to Plan A Vegan Burrito Dinner Party in Under 20 minutes

Who doesn’t love burritos? We most certainly do and we’re very excited to announce our partnership with Alpha Foods, an amazing company dedicated to creating incredibly delicious vegan foods that are high in protein and ready in under 2 minutes! Yes, you read that right, Alpha’s Burritos only take about 90 seconds to be ready. Their All Day Burritos come in four different flavors (Pizza, Mexicali, Chick’n Fajita and Philly Sandwich) and are great by themselves. If, however,  you’re about to host an impromptu dinner or you’re super busy but still want a full meal, you can easily prep some sides, dips and sauces to add to your feast and turn the burritos into a dinner party in no time. In today’s post, we want to share some of these recipe ideas with you so you can easily recreate them at home. We hope you’ll try and love them as much as we do! All recipes serve 4.

 

Step One: Prep Your Dips

Corn Guacamole

Ingredients:

2 large, ripe avocados

1/2 can of (roasted) corn

1 shallot, finely chopped

1/4 tsp of sea salt

1 pinch of freshly ground pepper

1 garlic clove, minced

1/2 handful fresh, chopped cilantro

1 lime, the juice

1/2 tomato, diced

 

Directions:

  1. Using a fork or a small food processor, mash the avocado (not too much, you’ll want it to remain a little chunky) and add all other ingredients. If you’re using a food processor, make sure you use the pulse function instead of blending it.
  2. Transfer to a serving bowl and set aside.

Spicy Tomato Salsa

Ingredients:

4-5 large tomatoes, diced

1 tbsp olive oil

1 handful fresh cilantro (or parsley), chopped

1 small red onion, chopped

1/2 lime or lemon, the juice

1 small red hot chill pepper, chopped (less if you want it to be less spicy)

1/2 tsp sea salt

Directions:

  1. Mix all ingredients in a bowl and serve.

 

 

 

Sriracha Hummus

The easiest way to make this will be to simply mix store-bought hummus and sriracha (as shown below), but know that you make your own hummus by blending chickpeas, tahini, olive oil, lemon juice, salt and a little water as well.

Ingredients:

1 container of hummus

1-2 tbsp of sriracha

Directions:

  1. Mix the ingredients and serve.

 

Step Two: Make Your Side Dishes

Easy Side Salad

Ingredients:

1 bag or head of your favorite lettuce (we used arugula, if you’re using romaine or iceberg, chop it before serving)

4 tomatoes, sliced

Your favorite dressing or vinaigrette (Balsamic vinaigrette is great)

Directions:

  1. Mix in a bowl and serve!

Note: this is supposed to be quick yet nutritious and tasty, not necessarily elaborate, but obviously feel free to add any veggies you like. Some ideas: celery, bell peppers, green onions, mushrooms and more!

Sautéed Mushrooms

Ingredients:

1 large pack of sliced mushrooms (any kind)

2 tbsp coconut or olive oil

1/4 tsp sea salt

2 tsp liquid smoke and/or soy sauce

1 pinch freshly ground pepper

3 green onions, chopped

Directions:

  1. Sauté the mushrooms and green onions in the oil at medium to high heat in a non stick pan for 3 minutes. Add the condiments and cook for 3-4 more minutes.
  2. Transfer to a serving dish and set aside.

 

Other Ideas For Side Dishes

When It comes to vegan side dishes, there are endless possibilities. You can use fresh herbs, roasted and sautéd veggies (peppers, cauliflower, zucchini, asparagus), potatoes, corn on the cob, couscous, quinoa, legumes and so much more!

 

Step Three: How to Serve Your All Day Burritos

Heating your burrito is the easiest part, simply microwave it for 90 seconds and voilà (if you don’t have a microwave oven, fear not, you can prep them in a conventional oven as well). To make them crispier, you can additionally sauté them in a skillet and a little oil for a minute or two, but that’s totally optional.

Our secret tip (which works great for all 4 flavors): Top your frozen burrito with 1-2 slices of vegan cheese before you heat it and then let it melt while cooking and garnish with fresh herbs.

Grab a plate, heat your Alpha Foods burrito (with or without vegan cheese) and pick your favorite sides and dips, then enjoy! Easy as that. We recommend 1-2 burritos per person as a meal, but you should definitely try all four of them at least once!
