Ice Cream Cake

Ingredients

  • Base:
  • 1 cup dates, soaked and pitted
  • 2 tbsp coconut oil, melted
  • 1 1/2 cups coconut flour
  • 1/2 cup almond flour
  • Put all ingredients into your food processor and process for a few minutes. Press your “dough” into cupcake cup molds and put them in the freezer for ~30 minutes.
  • Strawberry cream cheese topping:
  • 1 cup soaked cashews
  • 1 tbsp coconut syrup
  • 3 dates, pitted
  • 1 handful strawberries
  • 1/4 cup almond milk
  • 1 tsp vanilla powder
  • 1 tbsp açai powder
  • juice of one lemon

Instructions

  1. In your food processor process all ingredients until smooth. Pour into your cupcake moulds and keep them in the freezer over night.
