Maple Coconut Bacon Donuts

Ingredients

  • Dry ingredients:
  • 1 c. Flour
  • 1/2 c. Vegan sugar
  • 1/4 tsp. Salt
  • 1 1/2 tsp. Baking powder
  • Shake of cinnamon
  • 1/2 c. Coconut milk
  • 1/2 tsp. Apple cider vinegar in small bowl
  • 1 tbs ground flax with 3 tbs. water (makes the flax “egg”)
  • 4 tbs. coconut butter (soft)
  • 1/2 tsp. Vanilla
  • Coconut oil to grease the pan
  • Maple icing:
  • Powdered sugar
  • Maple syrup
  • Coconut Bacon:
  • 3 cups large coconut flakes, unsweetened
  • 2 tbs. maple syrup
  • 3 tbs. coconut aminos or gmo-free Tamari
  • 1 tbs. Smoked paprika

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients
  3. Combine Coconut milk with Apple cider vinegar in small bowl.
  4. Make one flax egg in small bowl.
  5. Add all ingredients together with: coconut butter (soft) and Vanilla
  6. Grease donut pans with coconut oil.
  7. Bake for 12 minutes.
  8. Cool on baking rack.
  9. Dip donuts in maple icing and top with coconut bacon.
  10. Coconut Bacon:
  11. Preheat oven to 350 degrees F.
  12. In large bowl, mix together: large coconut flakes (unsweetened), maple syrup, coconut aminos or gmo-free Tamari and Smoked paprika.
  13. Spread onto parchment lined pan. Bake for 7 minutes. Flip. Bake 5 more minutes or until crispy and golden brown.
