Matcha Coconut Pancakes


Ingredients

  • 1/4 cup buckwheat flour
  • 1 Tbsp brown (or white) rice flour
  • 2 Tbsp Arrowroot (Tapioca) flour
  • 1 egg replacer or flax egg
  • 1/2 tsp bicarb soda (baking soda)
  • 1 tsp vanilla extract
  • 1 Tbsp coconut oil
  • 1 tsp Matcha powder
  • 1 handful baby spinach leaves
  • 1/3 cup coconut water (to consistency)

Instructions

  1. Cook in a non stick pan over medium low for a couple of minutes each side
  2. Top with fresh fruit and drizzle with your favourite syrup.
