Mocha Oat Pudding

Ingredients

  • 1 cup oats - soaked in 1 cup oat milk
  • 1/4 cup espresso coffee
  • 1 tsp vanilla bean paste
  • 4 dates - pitted and soaked
  • 1 ripe banana
  • 1 tbsp cocoa powder

Instructions

  • Blend all the ingredients in a high speed blender
  • Add more or less cocoa powder to make the different shades
  • Place in the refrigerator to thicken
  • Optional: layer with coconut yogurt, homemade hazelnut granola, vegan chocolate-style cookies and coconut whipped cream on top.
