No-Bake Berry and Pistachio Bars



For the Crust:

  • 1 cup dates, softened (89 large dates)
  • 2 cups gluten free oat flour
  • 1 cup creamy Peanut Butter
  • 4 tbsp flaxseeds
  • 1 tsp cinnamon

For the Filling:

  • 1 2/3 cups cashews, soaked overnight
  • 1/2 cup maple syrup
  • 1/2 cup cashew milk
  • 1/2 cup frozen blackberries
  • 1/2 cup frozen blueberries
  • 1 tbsp lemon juice⠀


  • rose petals
  • pistachios, chopped


  1. Line a 9×9 pan with parchment paper. Set aside.⠀
  2. Combine all the ingredients for the crust in a blender and blend until smooth. Pour into pan and press until crust covers the entire pan. Leave in the fridge until ready to be used.
  3. To make the filling, combine all the ingredients together in a blender and blend until smooth. Pour into the pan. Place in freezer for 1 hr so it can set.
  4. When ready to cut, bring out from freezer and let it sit on the counter for 5 min to make slicing them easier. Slice into 16 pieces. Add toppings. Enjoy!
