No-Bake Brownies with Chocolate Ganache

No-Bake Brownies with Chocolate Ganache


Ingredients

Scale

Brownie:

  • 1 cup coconut flour, sifted
  • ¼ cup cacao
  • ¼ tsp salt
  • ½ cup nut butter (used PB, sub tahini if nut free)
  • 2 tsp vanilla
  • 34 drops stevia (sub 1 tbs sweetener of choice)
  • 2 tbs liquid sweetener
  • 2 tbs liquified coconut oil
  • 1 cup full fat coconut milk

Ganache:

  • 1 cup full fat coconut milk
  • 1 heaped tbs coconut oil
  • 1 bar vegan chocolate (100 gr)

Instructions

  1. Whisk dry ingredients for the brownie in a bowl (first 3), add remaining ingredients, and stir/kneed to combine. The dough must be firm enough to spread into a lined tin easily. Allow to set in the fridge.
  2. Add the ingredients for the ganache to a saucepan, keep whisking on low heat until fully combined. Allow to cool to thicken up but also yummy to spread right away!
  3. Store in the fridge for up to 4 days.
