These vegan no-bake brownies with chocolate ganache not only are quick and easy to whip up but are also gluten-free, keto/paleo-friendly, and easily nut-free, which makes them suitable for everyone to enjoy!

No-Bake Brownies with Chocolate Ganache

Ingredients
Brownie:
- 1 cup coconut flour, sifted
- ¼ cup cacao
- ¼ tsp salt
- ½ cup nut butter (used PB, sub tahini if nut free)
- 2 tsp vanilla
- 3–4 drops stevia (sub 1 tbs sweetener of choice)
- 2 tbs liquid sweetener
- 2 tbs liquified coconut oil
- 1 cup full fat coconut milk
Ganache:
- 1 cup full fat coconut milk
- 1 heaped tbs coconut oil
- 1 bar vegan chocolate (100 gr)
Instructions
- Whisk dry ingredients for the brownie in a bowl (first 3), add remaining ingredients, and stir/kneed to combine. The dough must be firm enough to spread into a lined tin easily. Allow to set in the fridge.
- Add the ingredients for the ganache to a saucepan, keep whisking on low heat until fully combined. Allow to cool to thicken up but also yummy to spread right away!
- Store in the fridge for up to 4 days.
