Oatmeal Creme Pies

Ingredients

  • 1 cup gluten free flour (all purpose)
  • 1 cup gluten free oats
  • 3/4 cup coconut palm sugar ( I was out so used brown sugar )
  • 1/2 cup coconut oil or dairy free butter
  • 1 flax “egg”
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract

Instructions

  1. Creme together oil / vegan butter, sugar and vanilla
  2. Sift remaining ingredients add oats slowly mix into wet Ingredients
  3. Spoon out and bake at 350F for 11 -13 minutes ( I do 11 for soft cookies )
  4. For creme filling
  5. can coconut creme / full fat coconut milk ( refrigerate for 24 hours )
  6. Scoop out only solid creme from the top of the can
  7. Place in mixing bowl add in 1 tablespoon maple syrup or coconut sugar ( more to your taste ) Whip up for 4 minutes while scrapping down the sides until peak forms
  8. Place In between cookies and done.
