Ombre Beetroot Gluten Free Pancakes


Ingredients

  • 1/4 cup buckwheat flour
  • 1 Tbsp rice flour
  • 2 Tbsp Arrowroot (Tapioca) flour
  • 1 egg replacer or flax egg
  • 1/2 tsp bicarb soda (baking soda)
  • 75g cooked beetroot
  • 1/2 tsp cardamom
  • 1 tsp vanilla extract
  • 1 Tbsp coconut oil
  • 1/3 cup almond milk (to consistency)
  • Natural sweetener to taste

Instructions

  1. Blend the beetroot with a teaspoon of water and set aside
  2. Blend the rest of the ingredients
  3. For the ombre effect, blend in a little of the beetroot mix in stages with the pancake batter
  4. Cook in a non stick pan over medium low for a couple of minutes each side
  5. Pink Yoghurt sauce
  6. Tbsp vegan yoghurt
  7. A small amount of beetroot juice to desired colour
  8. Natural sweetener to taste
  9. Mix well
