  • 720ml of dairy-free milk (I use almond milk)
  • 3 teaspoons of apple cider vinegar
  • 630g of self-raising flour
  • 300g of golden caster sugar
  • 1 1/2 teaspoons of baking powder
  • 1 1/2 teaspoons of bicarbonate of soda
  • 180g of coconut oil (Melted)
  • Pink food gel Ingredients for the buttercream
  • 400g of dairy-free butter
  • 650g of icing sugar
  • 2 teaspoons of vanilla bean paste (or vanilla extract)
  • Dairy-free-free milk (if needed) Toppings
  • Strawberry Jam (for the filling)
  • Unsweetened desiccated coconut
  • Fresh roses (for decoration only)
  • Edible glitter ️


  1. To make the cakes
  2. Preheat your oven to 180C/350F and line six 8inch cake tins with greaseproof paper. I did end up using only 5 cakes and used the other to make pink cake pops! If you don’t have six cake tins, you’ll have to bake them in stages.
  3. In a small bowl, combine the dairy-free milk with the apple cider vinegar and whisk until fully combined. Set aside for 10 minutes to curdle. This creates a vegan ‘buttermilk’.
  4. In a large mixing bowl, sift the flour, sugar, baking powder and bicarbonate of soda. Mix well to combine.
  5. Add the melted coconut oil to the ‘buttermilk’ and whisk to combine.
  6. Add the wet ingredients to the dry and mix until a smooth batter.
  7. Separate the batter into 6 separate bowls and tint the batter different shades of pink, gradually getting lighter until you leave the last cake plain. This creates your ombre effect.
  8. Pour equal amounts of batter into the lined cake tins. Make sure to tap the tins on the worktop to remove any air bubbles.
  9. Pop the cakes into the preheated oven and bake for 20-25 minutes. Check them after 20 minutes. You will know they are done when you put a knife or skewer in and it comes out clean and they are springy to the touch.
  10. Place the cakes on a cooling rack and allow to cool fully before frosting.
