Ombre Easter Pancakes


Ingredients

  • 1/2 cup flour (I used half oat & buckwheat)
  • 1/2 banana sliced
  • 1/2 cup coconut water or almond milk
  • 1 Tbsp granulated stevia
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • Blend all in a blender until smooth
  • If desired, divide batter in three
  • For purple colour add 1/2 tsp Maqui powder
  • For pink colour add berry superfood powder
  • Cook at low heat in a non stick pan, a couple of minutes each side
  • Sweet Coconut Yoghurt Sauce
  • 100g coconut yoghurt
  • 1 – 2 Tbsp rice malt or maple syrup (to taste)
  • Mix well & pour over pancakes
  • White Chocolate Easter Eggs
  • 100g Coconut Butter
  • 100ml coconut oil
  • Natural sweetener to taste (I used stevia drops)
  • Heat over a double broiler until melted
  • Divide, and stir through superfood powders to desired colour.
  • Purple – Maqui powder
  • Pink – Berry superfood powder
  • Green – matcha powder
  • Yellow – turmeric

Instructions

  1. Pour into molds
  2. Chill until set.
