If you ever find yourself waking up on a hot summer morning to an empty fridge (aside from a half-used carton of soy milk), and a bunch of overripe bananas on the counter, this one bowl vegan peanut banana bread recipe is for you! Sometimes it’s hard to believe that you can throw just a few pantry ingredients together in a bout of inspiration and get a tender, comforting breakfast – but this recipe is proof!
I absolutely love loaf cakes for how easy it is to make and how difficult it is to ruin them. They’re almost always fuss-free and can often be made in one bowl, which is especially enjoyable when you’re trying to bake for breakfast, and don’t feel like doing too many dishes. Additionally, if you literally don’t have too many dishes (such is the case for me, a person who recently moved into an empty apartment), these recipes still are a feel-good kitchen experience even with limited supplies. So I’m very happy to share this versatile creation with you!
To make this one-bowl vegan peanut bread, you’ll need just a few staple ingredients:
- 4 medium-sized ripe bananas (or 3 big ones)
- ¼ cup creamy peanut butter
- 1 ¾ cup flour
- ¼ cup sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- ~¼ cup plant milk
- ½ cup chopped peanuts (raw or slightly roasted)
And this is how you turn these ingredients into a delightful breakfast treat in just one bowl:
- Preheat the oven to 180ºC/350ºF and grease your loaf tin.
- In a big bowl, mash bananas with a fork or a potato masher.
- Add (room temperature, runny) peanut butter and mix well.
- Sieve in the flour little by little, mixing carefully. Add sugar, baking powder, soda, and salt. Mix until just combined.
- Add a splash of plant milk if the dough is too thick. It’s supposed to be thick and somewhat lumpy, but you can adjust the consistency with plant milk (for instance, if your peanut butter isn’t runny or your flour is too strong). Add chopped peanuts, mix gently one last time and transfer the dough to the tin.
- Place the tray in the lower third of the oven (so that the loaf’s top is centered) and bake for 50 minutes or until a toothpick comes out clean.
- Let cool for 15+ minutes before slicing. Enjoy with coffee, or a glass of chilled plant milk!
