- Serves 4– Mix in a large bowl:
- 400g spelt flour
- 60g starch
- 275g unsweetened applesauce
- 500ml almond milk
- 4 tbsp maple syrup
- 2 tbsp poppy seeds
- 1 tsp vanilla powder
- Mix well and let sit for about 20 minutes.
- That’s it for the batter.
- Cook the pancakes in a pan with a little oil until golden brown.
- For the coconut yogurt, simply mix plain coyo with blueberry fruit powder and serve with fresh berries on top.
