Pomegranate Overnight Oats



  • 1 cup GF rolled oats
  • 1 cup unsweetened almond milk
  • 1 TBSP maple syrup
  • 2 TBSP almond butter


  1. Blend the almond milk, maple syrup and almond butter in a high speed blender, mix with rolled oats and place in an airtight container.
  2. Allow to sit in the fridge for at least 4 hours or overnight.
  3. When ready, transfer oats to a bowl and top with your favorite fruit. I used fresh strawberries and pomegranate seeds, desiccated coconut, cacao nibs and 1 TBSP carob powder.
