Raspberry Gluten Free Pancakes


Ingredients

  • 1 & 1/4 cups Gluten Free All Purpose Plain Flour
  • 1 banana sliced
  • 2 Tbsp granulated stevia (or natural sweetener of choice)
  • 1 & 1/2 tsp baking powder
  • 1 Tbsp coconut oil
  • 1 & 1/4 cups unsweetened soy milk (or vegan milk of choice)
  • Pinch of salt
  • 1 cup fresh raspberries

Instructions

  1. Mix dry ingredients in a bowl
  2. Blend wet ingredients in a small blender until smooth
  3. Pour wet into dry and stir until just combined
  4. Ladle batter into pan as required, and drop a few raspberries into each pancake
  5. Cook over low heat until bubbles form, then flip and cook on other side.
