Raw Chocolate & Avocado Brownies


Ingredients

  • INGREDIENTS FOR THE BROWNIE:
  • 3/4 cup walnuts
  • 3/4 cup pecans (plus more for garnish)
  • 1 1/2 cup soft medjool dates, chopped
  • 1/3 cup cacao powder
  • 1 tsp vanilla extract
  • 2 tsp coconut oil, liquid
  • Pinch of salt
  • INGREDIENTS FOR THE FROSTING:
  • 1 small ripe avocado
  • 1/4 cup cacao powder
  • 4 Tbsp maple syrup
  • 1/4 tsp vanilla extract
  • 1 tsp coconut oil, liquid
  • Pinch of salt

Instructions

  1. Combine the brownie ingredients in a food processor and process until a sticky and smooth dough forms.
  2. Transfer to a 8″ baking pan (lined with parchment paper or greased with coconut oil).
  3. Press the dough down using a spatula (it’s easier if you use your fingers) until flat and firm.
  4. Let rest in the fridge while preparing the chocolate and avocado frosting.
  5. Combine the ingredients for the frosting (except for the coconut oil) in the jar of your high speed blender and blend until nice and creamy.
  6. Stream the coconut oil into the mixture.
  7. Using an offset spatula spread the frosting evenly over the brownie.
  8. Cut into squares and garnish with pecan halves.
  9. Keep in the refrigerator until ready to eat.
  10. Lick your fingers if needed!
