Raw “Wagon Wheeels”

Ingredients

  • Raspberry Chia jam:
  • 1 cup raspberries
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup ‘Marshmallow’:
  • 1/2 cup cashews soaked (2 hours)
  • 1/2 cup coconut (dried variety)
  • 1/2 tsp vanilla
  • 1/3 cup vegan milk (almond, oat etc)
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • Biscuit:
  • 1/2 cup buckwheat
  • 1/4 cup almond meal
  • 1/2 cup oats
  • 1012 medjool dates
  • Raw chocolate:
  • 1/2 cup coconut oil melted
  • 1/2 cup cacao
  • 1/4 cup maple syrup.

Instructions

  1. Combine all ingredients for the chia jam, mashing the raspberries with a fork, set aside.
  2. To make the marshmallow centre, add all ingredients to a blender and blend until smooth and creamy.
  3. Allow to set in fridge for 30 minutes.
  4. Meanwhile make the biscuits:
  5. Place buckwheat, oats and almond meal in a food processor or blender, and blend until it resembles flour.
  6. Add the dates and blend until the mix clumps together.
  7. Roll the biscuit mix between 2 sheets of baking paper.
  8. Cut circle shaped biscuits.
  9. Place biscuits in freezer for 10minutes. –
  10. Assembly: Add the marshmallow filling to a piping bag.
  11. Pipe the filling onto one half of a biscuit, leaving a well in the centre.
  12. Add the chia jam to the centre and top with the other biscuit.
  13. Place in freezer, repeat.
  14. Stir all ingredients for the raw chocolate and dip with the biscuits into the chocolate.
  15. Drizzle with more chocolate.
