Raw Wagon Wheels


  • Jam
  • 2 cups organic mixed berries
  • 1/4 cup white chia seeds
  • Enough water to cover
  • Biscuits
  • 1 cup rolled oats
  • 1 cup pitted dates
  • 1 cup almond butter
  • 1 teaspoon vanilla powder
  • 2 tbs coconut oil
  • Cream
  • 1/2 cup coconut butter, softened in bain marie
  • 1/2 cup coconut paste
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla powder
  • 2 tablespoons pure maple syrup
  • Chocolate
  • 2 cups sugar free vegan dark chocolate
  • 2 tbs coconut oil


  1. Jam
  2. In a saucepan over low heat, simmer water berries and chia seeds.
  3. With a wooden spoon smoosh the berries and stir through the chia seeds.
  4. Once chia seeds have absorbed the liquid and mixture has thickened transfer to a heat proof bowl and leave to chill in the fridge.
  5. Biscuit
  6. In a food processor blend the rolled oats, dates, almond butter, coconut oil and vanilla powder.
  7. Blend until the mix is doughy.
  8. Remove from the food processor and form a ball on a piece of baking paper.
  9. Roll out the dough to 1 cm thickness.
  10. Using a cookie cutter cut out circles and place on a baking tray lined with baking paper.
  11. I keep a paint scraper in the kitchen to help remove cookies without breaking them.
  12. Place tray in the freezer to harden.
  13. Cream
  14. In a food processor blend all ingredients until smooth and creamy.
  15. Place in the fridge to harden for a few minutes while you prep the chocolate.
  16. Chocolate
  17. In a bain marie or heat proof bowl over a simmering saucepan, melt chocolate and add in coconut oil.
  18. Remove bowl from heat and allow the chocolate to come to room temperature.
  19. Remove the cookies, jam and cream from the fridge and freezer.
  20. Make the cookie sandwiches. Biscuit-Cream-Jam-Biscuit.
  21. Next dip the cookies in the chocolate and again place them on the baking tray lined with baking paper.
  22. Place in the freezer to set for 20 minutes.
  23. Remove the wagon wheels from the freezer and again double coat them in the chocolate.
  24. Allow to set in the freezer again.
  25. Keep wagon wheels in an air tight container in the fridge.
