
Shiitake Miso Soup
Ingredients
- Soup:
- -4 cups water
- -4 oz flat rice noodles (same as the ones for pad Thai)
- -3 tbs miso paste -3 green onions chopped
- -1/2 pack shiitake mushrooms sliced thin -3 cups baby bok choy
- Shiitake Bacon:
- -1/2 pack shiitake bacon sliced thin (or whole pack if you love them)
- -3 tbs soy sauce -1 tbs olive oil
- -1 tsp maple syrup
Instructions
- Shiitake bacon:
- Add all liquid ingredients to a bowl with the sliced mushrooms and mix well. Let marinate for 10 mins.
- Heat a small pan to medium high and add mushrooms.
- Cook until well done and caramelized. Set aside
- For soup cook noodles according to package instructions and set aside.
- Bring your 4 cups of water to almost boiling then bring to simmer.
- In the meantime sauté your mushrooms, green onions & bok choy with a little water until cooked through.
- Add your veggies and noodles to the water.
- In a separate small bowl add a couple tablespoons of the hot water & your miso paste.
- Stir well until it’s creamy with no lumps.
- Add to soup and enjoy in a bowl topped with shiitake bacon & more green onions.
