  • Extra chocolate chopped (for topping)
  • Date caramel:
  • 1 cup dates (soaked in boiling water for 5 minutes)
  • 3 tbsp peanut butter
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • Pinch salt
  • 1/3 cup water (more or less)

Instructions

  1. Preheat oven to 180C.

  3. Then add the soy milk, stir to combine.
  4. Add all of the dry ingredients and mix thoroughly
  5. Slowly pour the aquafaba and extra milk, the batter should fall of the spoon quite quickly (when lifted in the air).
  6. Pour the mix into a lined square baking tin… Dollop teaspoons of caramel all over the brownie batter (recipe below) and use a skewer to incorporate the caramel and brownie.
  7. Scatter over peanuts and bake for 35 – 40 minutes.

  9. Process all ingredients in a blender until smooth.
  10. Serve with the leftover date caramel (if you have some left, although I would recommend using it all to swirl through the brownie)
