Strawberries and Nice Cream Vegan Gluten-free Waffles

Nothing says summer breakfast like strawberries and nice cream vegan gluten-free waffles, am I right? They are so easy to whip up, too – all you’ll need is a blender and a little time in the morning. The best part? You can make ahead and freeze them, for a quick & delicious breakfast option throughout the week!

Strawberries and Nice Cream Vegan Gluten-free Waffles


Ingredients

Scale

Vanilla nice cream

  • 4 frozen bananas, peeled and chopped
  • 1 tsp vanilla extract
  • 3 tbsp coconut milk (or sub any dairy-free milk)

Gluten-free blender waffles

  • 1.5 cups warm water
  • 2 tbsp oil
  • 3 tbsp agave/maple syrup
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • ¼ cup raw buckwheat
  • 1 cup gf rolled oats
  • 1 cup chickpea/gram flour
  • 2 tsp baking powder

Instructions

Nice cream

  1. Add all ingredients to a blender and process until smooth and creamy. Set aside in the freezer to firm up for 30 mins, until scoopable.

Waffles

  1. Add all ingredients to the blender and process until really smooth and creamy. Allow to sit for 5 mins. 
  2. Brush waffle iron with a little oil and add 3 tbsp of batter per waffle. Cook for 4-5 mins, until golden and crispy. 
  3. Leftover waffles can be frozen and reheated in a toaster or under the grill for quick brekkies!
