Strawberry Lime Hazelnut Cheesecakes


Ingredients

  • Base:
  • 3/4 cup hazelnuts
  • 1/4 cup sunflower seeds
  • 1 tbsp coconut oil
  • 5 medjool dates
  • pinch salt
  • Blend nuts and seeds, add dates, coconut oil and salt. Mixture must stick together. If not add more dates. Put in cupcake moulds. Freeze for 10 min
  • Filling:
  • First blend until smooth:
  • 1 1/2 cups soaked cashews
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup plant based milk or coconut water
  • 1 tbsp cacao butter
  • juice of 1 lime
  • vanille extract
  • pinch salt

Instructions

  1. Poor half of mixture on top of your base.
  2. Then blend 1 cup strawberries (thawed if frozen) and some more lime juice (optional) with the rest of mixture. Poor this strawberry layer on top of other layer.
  3. Freeze for at least 2.5 hours.
  4. Top with raw chocolate and rose petals
