This sweet raw coconut soup is a brilliant way to make a healthy meal in mere minutes. Mixing the sweet and savory flavors, it’s naturally raw, gluten-free, and absolutely delicious!

Ingredients
- 4 mangos
- 5 smaller tomatoes
- coconut meat from a young coconut
- cilantro - dill, and chives
- squeeze of lemon juice
- dash of chili powder
- kale
- cucumber noodles
- 1 diced tomato
Instructions
- Blend 4 mangos, 5 smaller tomatoes and coconut meat from a young coconut... (it was meaty so I blended it on high for a bit, and after pulse blended in some herbs > cilantro, dill and chives, plus a squeeze of lemon and a dash of chili powder).
- Pour it over kale and cucumber noodles (use a spiralizer or vegetable peeler to spiralize one or more cucumbers) and add 1 diced tomato!
