Sweet Raw Coconut Soup with Kale and Cucumber Noodles


Ingredients

Scale
  • 4 mangos
  • 5 smaller tomatoes
  • coconut meat from a young coconut
  • cilantro, dill, and chives
  • squeeze of lemon juice
  • dash of chili powder
  • kale
  • cucumber noodles
  • 1 diced tomato

Instructions

  1. Blend 4 mangos, 5 smaller tomatoes and coconut meat from a young coconut… (it was meaty so I blended it on high for a bit, and after pulse blended in some herbs > cilantro, dill and chives, plus a squeeze of lemon and a dash of chili powder). 
  2. Pour it over kale and cucumber noodles (use a spiralizer or vegetable peeler to spiralize one or more cucumbers) and add 1 diced tomato!
