- 2 Slices of vegan sourdough bread
- 1 ripe avocado
- 2 baby cucumbers
- 1/2 cup of chickpeas
- Coconut flakes for toppings
- Dash of sesame seeds
- Cut your ripe avocado open and smear directly onto your slices of toast.
- Place your cucumber slices, cut lengthwise, on top of your avo spread.
- Top with either fresh or roasted chickpeas + coconut flakes and finish off with some sesame seeds for crunch.
