- Brown rice, organic edamame, peanut baked tofu, sautéed kale, avocado, sprouts, and sesame seeds.
- Topped with more homemade peanut sauce (recipe below).
- The tofu is just gently pressed, cubed, and tossed in a little of the sauce then baked until crispy on the edges.
- Peanut sauce 3/4 cup powdered peanut butter 1/3 cup water, or more as needed to thin 3 tbs coconut aminos Juice of one lime 1 tablespoon maple syrup 2 teaspoons chile paste 1/4 tsp garlic powder 1/8 tsp ginger powder 1/2 teaspoon toasted sesame seeds
- Blend all ingredients until super creamy and enjoy!
