Savor the Seasons With This Apple Cake
I would highly recommend making this recipe at any time of year, but its scents and flavors are a little bit more special during the autumn and winter months. It’s the epitome of a cozy, comforting dessert and will have notes of baked apple and warming spices wafting through your kitchen as it bakes.
Ingredients You’ll Need For This Apple Cake
Cake
- Apple cider vinegar
- Soy milk
- Olive oil
- Golden superfine or sugar
- Vanilla paste
- Apple
- Flour
- Baking powder
- Baking soda
- Cinnamon
- Mixed spice
- Ginger
- Salt
Crumble Mixture
- Nondairy butter spread
- Golden superfine sugar
- Plain flour
Topping
- Apples
- Anise
How To Make This Vegan Apple Cake
Step 1: Preheat Oven and Prepare Vegan Buttermilk
Preheat your oven to 355 ̊F (180 ̊C) and line an 8-inch (20-cm) loaf pan with parchment paper.
To make the vegan buttermilk alternative, add the apple cider vinegar to the soy milk, stir and let thicken for 5 minutes.
Step 2: Creating the Batter and Merging Ingredients
Beat the olive oil and sugar together, then stir in the buttermilk, vanilla and grated apple. Sift the self-rising flour, baking powder and baking soda. Add the dry ingredients into the wet mixture along with the cinnamon, mixed spice, ginger and a pinch of salt. Fold the wet and dry ingredients together to combine, then transfer to your loaf pan.
Step 3: Crafting the Crumble and Baking
For the crumble mixture, combine the butter, sugar and plain flour together to form little crumble clusters and scatter these over your loaf. Bake for 40 minutes, until beautifully golden and crisp on top.
Remove from the oven and allow to cool on a cooling rack before topping with sliced apples and star anise and slicing into portions.

- 15 ml 1 tbsp apple cider vinegar
- 250 ml 8 oz soy milk
- 100 ml 4 oz olive oil
- 160 g ¾ cup golden superfine or granulated sugar
- ½ tsp vanilla paste
- 1 large apple - grated
- 250 g 2 cups self-rising flour
- 2 tsp baking powder
- 1/3 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp mixed spice
- ¼ tsp ground ginger
- Pinch of salt
Crumble Mixture
- 14 g 1 tbsp nondairy butter spread
- 24 g 2 tbsp golden superfine or granulated sugar
- 16 g 2 tbsp plain flour
Topping
- Sliced apples
- Star anise
Instructions
