Vegan Banana Bread Donuts & Peanut Butter Mousse


  • 1 cup gluten-free all purpose flour
  • 1/4 cup teff flour or oat flour
  • 2 very ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 1/2 tsp baking powder
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 4 tbsp creamy peanut butter
  • 1 can coconut cream, just the cream from the top – about 2 tbsp
  • 1 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • optional: chocolate chip chunks (dairy-free and gluten-free)


  1. Preheat the oven to 375 F
  2. In a blender, mix together the banana, maple syrup, coconut sugar, almond milk and vanilla extract. In a bowl, mix together the all purpose flour, teff flour and the baking powder.
  3. Add the wet ingredients to the dry ingredients and stir. Add the batter to a zip loc or piping bag and pipe into 6 donut molds.
  4. Bake for roughly 10-12 minutes, checking around 10 minutes to make sure the donuts are fully baked! Depending on your oven, the donuts could bake for 12-15 minutes, so keep a close eye on them! Let the donuts cool completely before adding the peanut butter mousse.
  5. To make the mousse, refrigerate a can of coconut cream over night, then scoop out just the cream from the top into a blender.
  6. Add the maple syrup, coconut oil and the peanut butter and blend until completely mixed together. Add to a bowl and lightly whip until fluffy, then top each donut with the peanut butter mousse and a few chocolate chip chunks!
